… first thing in the morning, it’s a sign from God, not to spend a whole lot of time in the kitchen, that day.
So, by lunch time, I find myself watching a “The Chew” instead. It’s always good to see what they’re making, to see if there’s anything, I can convert to my low carb diet. So far… “Succotash Hand Pies” are not going to pass my 60g of carbs or less per day rule, “as is” unless I only eat half of one, and a head of lettuce for dinner.
I’m thinking this might be a day for a “Chicken Soft Burrito”. I know, I know. The tortilla itself, is normally 50g of carbs, but not if you use an 8″ “Ole” brand low carb tortilla or a similar low carb-friendly brand. The plain version is 5g, so that leaves a lot of room for my daily limit.
So, considering my toaster incident, earlier today, I’m happy to report this is a microwave recipe:
Place one 8″ Low Carb Tortilla onto a microwaveable plate.
Put a 1/2 cup of pre-cooked chicken breast into the center of the tortilla, leaving plenty of room to fold the edges in later.
Dash a TBSP of mild, green taco sauce or the low carb sauce of your choice over the chicken.
Sprinkle on 1/4 CUP of shredded Mexican Blend cheese on top of that.
Place the plate into the microwave for 1-1 1/2 minutes.
Remove the plate from the microwave and dab with 1 TBSP of Sour Cream or Plain Greek Yogurt.
Fold the edges inward burrito-style and serve. Ole’!
